QUICK, FRESH & FRUITY PORRIDGE

STEP 1

1 cup of porridge e.g oats in a saucepan 1cup milk or water and sprinkle in a pinch of salt. Sugar or honey to taste. Bring to the boil and simmer for 4-5 minutes, stirring from time to time and watching carefully that it doesn’t stick to the bottom of the pan.

    Or you can try this in a microwave. Mix the porridge oats, milk or water and a pinch of salt in a large microwave-proof bowl, then microwave on High for 5 minutes, stirring halfway through. Leave to stand for 2 minutes before eating.

  • STEP 3

    To serve, pour into bowls and add a variety of fresh fruit.


CARAMELISED CINNAMON BANANA & CHOCOLATE CHIP

Add 2 teaspoon of cinnamon

Slice bananas

STEP 1 In a large frying pan, heat the brown sugar over a moderate heat, after about 1-2 minutes the sugar will start to caramelise around the edges of the pan. Stir the sugar with a wooden spoon until the sugar has changed to a golden amber colour, continue cooking but be careful not to burn.

STEP 2 Remove from the heat and stir in the butter, vanilla seeds and 2 tbsp of cold water, to stop it cooking any further.

STEP 3 Add the bananas cut side down and return to the heat; cook for 1-2 minutes and then turn over, the bananas should have taken on the caramel colour.

STEP 4 Place the slices , pile the bananas on top of the porridge and pour over the caramel sauce.

STEP 5 Add a sprinkling of chocolate chips, sprinkle some cinnamon, and add a bit of milk or cream.

MAPLE & PECAN PORRIDGE, WITH GRANOLA

Use maple syrup instead of sugar when cooking the porridge, add a sprinkle a few pecans and granola for a contrast in texture and and a final drizzle of maple syrup.

COCOA POWDER, POWER

Add half a cup of cocoa powder to the mix and drizzle with chocolate sauce or a dollop of nutella to serve.

COCONUT DREAM

Add half a cup of dried coconut to the mix when making the porridge , top with caramelised bananas, garnish with marshmallows and graham crackers for texture.
